The Role of Chutney in Ayurvedic & Indian Cuisine

Chutneys are a cross between a fruit preserve and a savory condiment. Ubiquitous in Indian and Ayurvedic cuisine, chutneys enhance meals with flavor and digestive power. These tangy spreads are often made with a combination of cooked fruits, savory digestive spices, and vinegar—though this Ayurvedic variation calls for citrus juices as a milder alternative (vinegar is highly acidic and can aggravate Pitta dosha).

How to Make Date Chutney

Here’s how to make our delicious date chutney recipe!

Ingredients

  • 1 tablespoon oil
  • ¼ teaspoon black mustard seeds
  • 1 cup packed pitted dates
  • ½ cup orange juice
  • ¼ cup lemon juice
  • ¼ teaspoon ground coriander
  • ¼ teaspoon ground cardamom
  • ⅛ teaspoon ground cloves
  • ¼ teaspoon salt

Directions

  1. Heat the oil in a saucepan. Add the mustard seeds and sauté over low heat until they “dance.”
  2. Add the remaining ingredients. Cover and simmer for 10 minutes.
  3. Purée in the blender or food processor until smooth.
