Broccoli Rice Casserole

Simple to prepare and full of nutrients, this easy broccoli rice casserole recipe calls for basmati rice, broccoli, and celery baked in veggie broth and ghee. Our zesty Organic Calm Vata Churna is the star ingredient here, with digestion-boosting spices like ginger, cumin, and turmeric.

 Ayurveda and Rice

Basmati rice is a daily staple in the Ayurvedic kitchen. It’s easy to digest, nourishing, and balances all three doshas. It is also considered to be a sattvic (pure) food. The simple elegance of basmati is hard to beat, but for a little variation, try a rice pilaf with dried fruit or this Lemon Basmati Rice recipe. Kitchari (basmati rice and mung bean stew) is a great option for an easy one-pot meal.

On the sweeter side, there’s nothing like Classic Ayurvedic Rice Pudding, also known as Kheer. (Note: Ayurveda considered basmati rice more digestible than brown rice.)

Ingredients

  • 5 medium broccoli crowns (chopped into bite-sized pieces)
  • 1 tablespoon of ghee
  • 2 teaspoons of Organic Calm Vata Churna
  • 1 cup of basmati rice
  • 2¼ cups of water
  • 2 ribs of celery (chopped bite size)
  • 7 ounces of vegetable broth
  • Fresh ground black pepper

Directions

  1. Lightly fry the Organic Calm Vata Churna in ghee in a small saucepan and add the rice and water.
  2. Boil rice, covered tightly for five minutes in the water. Pour mixture into a large casserole dish as the first layer.
  3. Add chopped celery and broccoli and pour the vegetable broth over the top. Cover and bake at 400° F for 25 minutes.
  4. When done, remove the cover and season with salt and pepper.
