Milletto

Ingredients

  • 1 cup millet
  • 2 tablespoons ghee
  • 3 cups water
  • 1 teaspoon salt
  • 3 tablespoons ghee
  • 1 teaspoon Pitta Churna
  • ¼ cabbage
  • 3 carrots
  • 3 celery stalks
  • 1 large zucchini
  • ½ pound paneer
  • ½ pound asparagus
  • 2 tablespoons minced fresh basil
  • 3 tablespoons minced fresh parsley
  • ¼ cup walnuts
  • Salt
  • Pepper

Directions

  1. Roast millet in ghee for 3 minutes. Add water and salt and bring to a boil. Reduce heat to low and simmer for 30 minutes, until all the water is absorbed.
  2. Slice cabbage thin, and cut other vegetables into small pieces. Sauté Organic Pitta Churna in ghee for 30 seconds. Add cabbage, cover and sauté for 15 minutes. Add the rest of the vegetables and paneer and sauté for another 15 minutes until they are tender.
  3. Add herbs and walnuts, and season with salt and pepper. Stir in the cooked millet.
