Squash Curry

Ingredients

  • 1½ cups butternut squash, yams, or sweet potatoes
  • 1 tablespoon raisins (soaked in water for 15 minutes)
  • 2 teaspoons crushed cashews
  • 1 teaspoon brown sugar
  • 1 tablespoon minced cilantro leaves
  • ½ teaspoon salt
  • 1 tablespoon ghee
  • 2 teaspoons Organic Vata Churna

Directions

  1. Bake or steam squash. Sauté churna in ghee. Add cashews, brown sugar, and raisins.
  2. Cube or mash squash and add to mixture. Add salt and cilantro. Cook for 5 minutes.
  3. Serve with rice or chapati and mung dhal.
